Homemade Shiitake Mushroom Broth

Preparing homemade broth ahead of time brings ease and nourishment to your busy life while giving you full control over the ingredients. This classic, light, and comforting vegetarian broth is made by gently simmering shiitake mushrooms for a clear, umami-rich base. Make a large batch, store it in the fridge or freezer, and have a ready, versatile broth for our soup packs or to enjoy on its own.

INGREDIENTS

  • 10 dried shiitake mushrooms
  • 12 cups cold water

COOKING INSTRUCTIONS

1. RINSE

Rinse the shiitake mushrooms with warm water.

2. SIMMER

Place the mushrooms in a pot with water. Bring to a boil, then cover and simmer on low heat for about 1 to 1½ hours, adding more water as needed.

3. COOL AND STORE

Once complete, turn off the heat and let the broth cool slightly. Remove the mushrooms and pour into clean jars or containers. Discard any bits at the bottom.

Refrigerate for up to 1 week, or freeze for longer storage.
